Our artisans’ sense and skills gained over years of baking castella cakes are critical to realizing this fine, moist crumb.
The included AZUKI paste made with AZUKI from Hokkaido is smooth and moist, making for a perfect pairing with the cake.

Hokkaido Wheat

We use the most suitable wheat flour from Hokkaido to create our fine, moist crumb castella cakes.

Secret Ingredient

If the batter is mixed too much, the flavor and mouthfeel change drastically. To avoid this, our artisans must mix the batter carefully.
The secret ingredient is a touch of salt to highlight and balance the flavor.
