TANEYA's wagashi artisans experimented with everything from ingredient ratios to how the AZUKI is cooked for over 10 years to develop our Honnamayokan.

The still-hot yokan is filled in an environmentally controlled clean room.
TANEYA succeeded in capturing the true flavor of AZUKI by using our own unique honnama method.

Pursuing an ideal flavor experience, we at TANEYA achieved this yokan thanks to innovative ideas after much trial and error.

Ingredients

Hokkaido AZUKI

We use contract farmer-grown AZUKI from Hokkaido.
The fluctuating temperatures during day and night nurture these flavorful AZUKI. Each year brings a slightly different flavor, even from the same growing areas.
Our wagashi artisans determine the characteristics of the harvest for a given year and procure the most suitable AZUKI for our yokan.

Water From Shiga, Our Home Prefecture

TANEYA‘s home of Shiga Prefecture has bountiful water resources. The groundwater stored in the mountains surrounding Lake Biwa appears in the form of springs that dot the prefecture.
The Echi River area in Shiga Prefecture, where our plant is located, is also a bountiful source of high-quality water.
Along with AZUKI, water is an essential ingredient for making yokan.
