TANEYA’s AZUKI

AZUKI paste is very important in the creation of TANEYA's confections.
Made from AZUKI, it is the foundation of Japanese confections
AZUKI paste is made from simple
ingredients—AZUKI and sugar—and its flavor changes greatly depending on how it is cooked.
At TANEYA, experienced artisans cook AZUKI in a large copper pot every day to make our AZUKI paste.
Another key characteristic of TANEYA's AZUKI paste is that it is adjusted to a level of sweetness and firmness that matches the given product, taking into
consideration the harmony with the ingredients it is combined with.

The Ingredients
Behind Our Confections

Japanese confections, or wagashi, are closely tied to the seasons in Japan.
While some confections are available throughout the year, there are also numerous seasonal examples, such as spring confections made with cherry leaves and autumn confections made with chestnuts and sweet potatoes.
In addition to using seasonal ingredients, at TANEYA we also offer saijika, or confections associated with specific festivals and events.
We place special importance on confectionery work using unique seasonal ingredients.

Working Alongside Nature

TANEYA has been making confections in Shiga for over 150 years.
One thing we have always valued is the idea that the ingredients in our confections come from the bounties of nature.
We cannot make our confections without the harvest of AZUKI and rice.
Our confectionery work is therefore only possible when there is a rich natural environment nurturing these and other ingredients.
We at TANEYA are working to safeguard the natural world so that we can continue our work as a Shiga Prefecture confectionery shop delivering delicious treats to customers.
