The batter is baked on copper plates.
Copper plates have good thermal conductivity and transmit heat evenly to the batter. This makes them ideal for baking fluffy dorayaki.
We use contract farmer-grown AZUKI from Hokkaido for our AZUKI paste. Not too sweet, it is cooked until tender.
The white AZUKI used at TANEYA are fine, creating a nice, smooth mouthfeel. They are characterized by their refreshing and elegant sweetness.
The limited harvest and production makes these a rare ingredient.
